Which classical book should I read?

I’m going into the seventh grade and for summer reading I have to read 1 classical book. I bought Alice in Wonderland, but I got bored of it. There aren’t many on the list, the only other books there are are The Iliad and the Odyssey, any Jane Austen book, The Illustrated Man, the Lord of the Rings trilogy, and Dracula. I tried reading Wuthering Heights but I didn’t understand it, so I think the Pride and Prejudice will be too hard to read. I’m not interested in the other books besides Dracula.
So should I read Dracula or maybe try to the Pride and Prejudice, and are they hard to read?

Dracula was exceptional and a fairly quick read. Just don’t expect it to be anything like the movie from the 90s. Because they’re nothing alike.

I’ve never read Pride and Prejudice.
